Preparation Steps

  • Mixing: Combine the Berliner Mix, yeast, and water in a professional mixer. Mix on slow speed for 2 minutes, then on fast speed for 8-10 minutes until the dough is smooth and elastic.

  • Proofing: Divide the dough into 50g pieces and roll into smooth balls. Place in a proofing chamber (35°C) for approximately 50-60 minutes to ensure a perfect rise.

  • Frying: Fry in high-quality oil at 170°C for about 3 minutes on each side. The dough’s structure prevents excess oil penetration during this stage.

  • Finishing: Once cooled slightly, inject with your favorite Extra Fruit Filling and dust with powdered sugar for the final professional touch.

For the best sensory experience, allow the Berliners to rest for at least 30 minutes after frying before injecting the filling. This resting period ensures that the interior structure is fully stabilized, preventing any leakage and maintaining the perfect contrast between the soft dough and the rich fruit filling.
